Mother's Day — pancakes edition
It's been a long time since the last time I sent this email. The last few months I've been preoccupied with other things. This morning is the first time in months that I felt like writing again.
Last week we traveled to visit our friends, Hannah and Caleb, for their wedding celebration. They officially got married early 2020, and scheduled their wedding for April that year, which is exactly when the pandemic started. Thus everything got postponed, and then postponed again. Since then they've had a beautiful smily bub join their family. Anyway, long story short, we got to see them, spend time with them, and celebrate their family last week after not seeing them for a while. When Hannah picked us up from the airport, Lachlan asked how does it feel to be a mum? And Hannah said that it feels natural, like she's always been a mum, but now she is complete.
The Mother's Day tradition in our family is to cook breakfast for mum, and today I'm getting choux pastry buttermilk pancakes with macerated red fruits. We actually make them very thin, more like crepes. And we eat them with a sprinkle of brown sugar and a squeeze of lemon juice. I also add some cut fruit to the mix.
This email is not going to talk much about food. Instead it will give you some ideas of what to cook today for someone you appreciate.

Here are this week’s recipe suggestions for you to try:
Coconut cajun tofu bowls — this recipe is packed with flavour. I like it so much that I am looking forward to having it again soon.
Tamago Kake Gohan (Japanese-Style Rice With Egg) — we had this for breakfast yesterday. It is perfect when you have leftover rice. It is super quick to make and it is full of umami.
Eggplant parmigiana — we made this for friends a couple of weeks ago. This version is easier to make than typical recipes and just so yummy.
Sourdough pancakes — this is my default pancakes recipe when I'd like to use my sourdough discards.
Sourdough crepes — another recipe I return to regularly.
Pancakes by our friend Pat:
1 ½ cups all-purpose flour
1 ¼ cups milk
1 egg
3 tbs butter, melted
1 tbs white sugar
2 ts baking powder
1 ts salt
Directions
Mix flour, milk, egg, butter, sugar, baking powder, and salt together.
Heat a lightly oiled griddle over low heat. Scoop 1/4 cup batter onto the griddle and cook until top and edges are dry, 3 to 4 minutes.
Flip and cook until lightly browned on the other side, 2 to 3 minutes. Repeat with remaining batter.
Load up your favourite toppings and enjoy!
