You’re receiving this email because you either signed up to this newsletter or Lachlan and Elle have spoken to you about weekly meal plans and food education for your little ones.
We have been procrastinating getting this weekly email out because we wanted to do so much. We were talking to a copy writer to help us write content on how teach our kids to be curious about food. We wanted to include blog posts, cooking tips, ten suggestions for meals… We worried about meals that would fit downunder but not the season in the northern hemisphere. We worried our meals take too long to make when parents asked us for meals you take 20-30 minutes to make and are nutrious and healthy… And thus we ended up doing nothing. So here we go again (thank you for the nudge Sugendran!)
We are going to keep it simple with a few suggestions for you to try this week and a link to our personal meal plan from last week. Please let us what you think of our suggestions, if you tried anything, how did it come out, and any other ideas or suggestions you have for us. We would love to hear from you.
So then, here’s a few suggestions for you to try this week.
- Garlicky lentils pasta - quick comfort food
- Creamy cauliflower and leek soup
- Gingery mango berry smoothie - one high fibre smoothie to start your morning right
- Peanut butter overnight oats - and a second high fibre recipe. This has become a weekly ritual for mornings when we have to get up early to get organised
- Curried egg sandwiches:
- 3 hard boiled eggs
- 1 tsp curry
- Mayo
- Chives, chopped (optional)
- Salt and pepper, to taste
- Lettuce (or other greens)
- How to? Mash eggs with a fork. Mix with mayo, curry powder, chives, salt, and pepper. Spread butter on bread and then divide the egg mix and greens between all the sandwiches.
